Parfaits – sounds fancy, right?
In reality it’s just layers of yoghurt and fresh, canned or frozen fruit and a bit of granola or nuts.
But extremely D-e-l-i-c-i-o-u-s !!!
What I love about yoghurt parfaits is that they are the perfect breakfast or brunch highlight and insanely quick to prepare. And let´s not forget the pretty colours. Served in see through glasses, they can be the show stopper of any meal.
How is the taste ?
Creamy, fruity, refreshing and surprisingly very light. Trust me, it is !
What yoghurt is the best ?
You can use any flavour or yoghurt type of your choice, as long as it goes with the toppings you choose. I like combining thick Greek yoghurt or low-fat quark with fresh cream.
Yes, yes, even plain or low fat works ! Look for yoghurt with no additives for a sugar-free variant (but keep your expectations realistic).
Does it have to be canned fruit?
Of course not! You can prepare fruit compote using fresh fruits of your choice or use frozen ones as alternative!
What type of granola ?
Typically I like to use granola made from oats and nuts. You can completely leave that out or even replace with just nuts like almonds, walnuts, cashews. It´s totally up to you what you like.
A tip if you’re meal prepping your parfaits: Add last minute on top to avoid sogginess.
Can it be made ahead ?
This is the perfect recipe to make the day before so you can grab one as you’re walking out the door in the morning or to serve as part of your party meal.
I usually layer the yoghurt and fruit in the serving glass and seal it with cling film in the refrigerator a night before. When I have to serve, I add the granola or just fresh fruit at the last second to retain the crunchiness and freshness.
But let´s admit, the granola at bottom looks more attractive. If you insist on serving it how I have in the images below, just prepare the yoghurt mixture and the compote separately. Assemble last minute!

Peach & Yoghurt Parfaits
Ingredients
- 500 g low fat quark / thick Greek yoghurt
- 200 g fresh cream
- 2 Tbsp sugar
- 1 Tbsp vanilla sugar
- 3 Tbsp milk
- 1 can peaches 480 g
- 6 Tbsp muesli / granola / nuts optional
- raspberries / blueberries / mint leaves to garnish
Instructions
- Blend the canned peaches into a fine puree.
- In a separate bowl, whip the cream until fluffy.
- In a third bowl mix together the quark and milk, add in sugar and vanilla sugar.
- Fold in the whipped cream.
- Layer the bottom of the serving dessert glasses / cups with some muesli, cover with some quark and pour the peach puree on top.
- Garnish with fresh mint or red berries.
