These baked #chaat cups are light, guilt-free pleasures you can add to your iftar menu. The spice level is adjustable which allows everyone enjoy their chatori katoris their very own way 😁

Baked Chatori Katori
.
Spring roll pastry 
1 cup boiled chickpeas
2 Tbsp Shan chana chat masala
4 Tbsp Shan tamarind chutney
.
Yoghurt Sauce
1 cup yoghurt
¼ cup milk
1 tsp Shan Chat Masala
3 tsp sugar
.
Mint Sauce
1 cup fresh mint
½ cup fresh coriander
¼ green chili
1 garlic clove
Shan pink salt
2 Tbsp vinegar
.
Shan Tamarind Chutney
Ketchup, optional
Fresh pomegranate arils, optional
Sev to garnish
.
Cut the pastry in 9x9 cm squares and give them a quick spray with cooking oil. Arrange two squares in each mould of the muffin tin and give a light press. Bake in preheated oven at 200 C until light brown and crispy.

Prepare the yoghurt sauce by combining all listed ingredients. Also, make the mint sauce by blending all listed ingredients in a food processor. Combine the boiled chickpeas with Shan chana chat masala and Shan tamarind chutney. 
.
Take a pastry cup and assemble (right before serving) by filling with a layer of chickpeas, then pour in some yoghurt sauce followed by mint chutney, Shan tamarind chutney and some ketchup. Garnish with fresh pomegranate arils and sev. Serve immediately!

Spicy Fish Bites
.
800 g boneless white fish (e.g. Cod), cut in cubes
2 Tbsp Shan ginger garlic paste
½ pkt Shan Fried Fish seasoning
3 Tbsp lemon juice
2 Tbsp all purpose flour
2 eggs whisked with ¼ cup milk
1 ½ cup panko breadcrumbs
½ cup all purpose flour
1 tsp chili flakes
4 Tbsp dried parsley
Oil for shallow frying (See alternative)

In a bowl, add Shan fried fish seasoning, ginger garlic paste, lemon juice and 2 tbsp flour to the fish.
In another bowl, mix together panko breadcrumbs, ½ cup flour, chili flakes and dried parsley.
.
Dip the fish first in egg mixture, then coat with panko crumbs. 
.
Heat oil in a deep pan. Fry the fish on medium heat until golden brown. 
.
Alternatively, bake at 200 C for 20 min in oven. 
OR spray the fish with some oil and air fry for 7 min at 180 C, then flip the side and air fry for another 7 min.

Achari Peppers
.
300 g minced meat (beef or mutton)
2 Tbsp oil
2 Tbsp @shanfoods ginger garlic paste
1 chopped onion
1/3 pkt @shanfoods Achar Gosht seasoning
1 pkt @shanfoods Pakora / Bhajia Mix
¼ cup rice flour, optional
Mild green chili like Bhavnagri, Turkish carliston or bullhorn (ideal for stuffing)
Oil for deep frying

Take minced meat in a pan and add ½ cup water to it. Cover and cook for 15 min. Add in oil, chopped onion and ginger garlic paste. Mix well, season with Shan Achar Gosht masala and fry on medium heat until the mince begins to release its fat. Allow to cool.
.
Add ca. 1 cup water and rice flour to Shan Pakora mix. Set aside.
Slit each green chili from one side. Remove the seeds. Stuff with the prepared filling. 
.
Heat oil in a wok. Dip each chili into the pakora batter and slide into the hot oil. Fry until gold brown. Serve with green chutney or ketchup.

Day 5 : Help an elderly pick their groceries today❣️A small act of kindness will double the taste of your #iftar .

Spring rolls with a hint of Shan #tandoori masala is a perfect blend of flavors to satisfy your cravings ❣️❣️
.

Tandoori Spring Rolls
.
300 g boneless chicken, cut into small cubes
½ pkt Shan Tandoori Masala
2 tsp Shan ginger garlic paste
2 tsp corn starch
2 tsp lemon juice
2 Tbsp oil
1 carrot, julienned
½ green paprika, julienned
1 cup shredded cabbage
1 cup boiled spaghetti
¼ cup chopped green coriander
¼ cup Milk or 2 Tbsp cornstarch mixed with 4 Tbsp water to seal the rolls
oil for frying
.
Marinate chicken meat with Shan tandoori masala, corn starch, Shan gg paste and lemon juice for 30 min. Take oil in a pan, saute´ the chicken on medium heat until soft. Add in the carrot, then capsicum and finally the cabbage. Keep stirring and cook on high heat just until the veggies change their color but are still crunchy. Stir in the boiled spaghetti and cook for 1-2 min. Let the filling cool completely. Add chopped coriander.

Lay out the wrapper with the SMOOTH SIDE DOWN in a diamond position. Place about 3 tbsp filling on the bottom. Roll up halfway, fold sides in, then finish rolling. Seal with milk or cornstarch water slurry. 
.
Pour enough oil in a frying pan so it is double the height of the spring rolls. Heat on medium high until hot. Fry the rolls until golden brown on both sides.

These daal stuffed mini #samosas are super delicious and also very budget friendly. You can use the lentils in #sehri  and use the leftovers to stuff the samosas or vice versa. Hence, no food wastage as well.
.

Lentil Samosa
.
1 cup white urad lentil, soaked in water for 3 hrs
3 Tbsp oil
2 Tbsp Shan ginger paste
1/3 pkt Shan Daal Masala
½ cup chopped fresh coriander
Spring roll sheets / Samosa sheets
3 Tbsp corn starch mixed with 1/3 cup water for the slurry
Oil for deep frying
.
Heat oil in a pan and saute´the ginger paste. Add in the soaked drained lentils. Season with Shan daal masala, add 1/2 cup water (you may add more later) and stir carefully. Cover the pan and allow to cook until the water has evaporated and the lentils are completely done. Allow to cool before adding chopped coriander.
Make the slurry. Cut the spring roll pastry into rectangles of about 3 inches width. Take 2 Tbsp lentil mixture, place it on one side of the pastry and fold into a triangle. Use the slurry to seal the open sides.

Heat oil in a pan. Fry samosas on medium heat until golden brown on both sides. Serve with Shan green raita!

Chicken Ghotala
.
500 g ground chicken, cooked in ½ cup water
4 Tbsp + 2 Tbsp oil
2 Tbsp Shan ginger garlic paste
½ pkt Shan Keema mix
2 medium onions, chopped
1 large tomato, chopped
2 green chili, chopped
1 red chili, optional
4-5 eggs
¼ cup milk
¼ cup chopped fresh coriander
.
Take 4 Tbsp oil in a pan. Add Shan gg paste, chicken mince and Shan Keema seasoning. Cook on medium heat until fragrant. Add in the chopped veggies and continue cooking until slightly tender. Push the mixture towards the sides of the pan. Pour in 2 Tbsp oil in the middle and add in the cracked eggs and milk. Cover the pan with a lid for 2-3 min. Scramble the eggs. Add the chopped herbs and give the mixture a final stir.

Chicken Tikka Patties
.
400 g boneless chicken, cut in small cubes
½ pkt Shan Tikka Masala
1 Tbsp Shan ginger garlic paste
2 tsp lemon juice
2 Tbsp oil
1 medium chopped onion
2 Tbsp flour
1 cup milk

4 Tbsp fresh coriander
Puff pastry
1 egg whisked with 2 Tbsp milk
sesame seeds mixed with some poppy seeds
.
Combine chicken cubes, Shan tikka masala, Shan gg paste and lemon juice in a bowl.
Take oil in a pan and cook the marinated chicken until translucent. Add onions. As soon they change color, add in the flour and mix well. Pour in the milk gradually and allow to thicken on medium heat.
Take off from heat and allow to cool. Add in chopped coriander. 
.
Cut puff pastry into 6 x 8 cm rectangles. Line the baking tray with parchment paper. Arrange ca. 12 rectangles on it. Brush with egg mixture, place second layer of puff pastry, brush again with egg wash. Then place 2 tbsp filling on each rectangle and cover with the last layer of puff pastry. Apply egg wash and sprinkle seeds mixture. Bake in preheated oven (200 C) for ca. 20 min until golden and puff up.

My favorite #sahur & #iftar item made easy with @shanfoodsglobal ‘s Shami Kabab seasoning. No extra salt & spices required!

Shami Kabab
.
1 kg boneless beef
1 cup split yellow lentil / chana daal, soaked in water for 4 hours
3 medium onions
2 Tbsp Shan ginger garlic paste
1 pkt Shan Shami Kebab Mix
2 eggs
½ cup chopped fresh coriander
oil for frying
.
Take all the ingredients except oil, fresh coriander and eggs in a cooking pot. Add 6 cups water. Bring to a boil. Cover and allow to cook until meat and lentils are completely tender. Use an electric hand mixer to coarsely ground the mixture. This will ensure a thread-like consistency. Allow to cool completely and then add eggs and coriander. Combine well. 
Shape into round flat patties. Heat oil in a pan and deep/shallow fry the kababs until golden brown on both sides.

I tell you, its really hard to resist these homemade, „crispy“ #springrolls stuffed with loads of crunchy cabbage, carrots, ground chicken, and capsicum. Eat them alone, or pair them with a dipping sauce. Try the recipe & come back to thank me later 😉

Crispy Spring Rolls
1 cup minced chicken / boiled shredded chicken
1,5 cup shredded cabbage
1/2 cup shredded capsicum 
1 cup shredded carrots
2 Tbsp soy sauce 
Salt
Pepper
2 tbsp vegetable oil
1 tsp minced garlic 
2 Tbsp corn starch (this ensures the rolls stay crispy after frying)

Milk to seal the rolls (yes, I dont make any slurry, milk or cream works equally good)
